The chef’s are still making some last minute adjustments on the menu but here is how it is shaping up so far…

3 Course Menu $35 benefiting Culinaria.
Course One
Berkwood Farms Berkshire Pig Head Soup with cabbage, paprika, and bacon fat croutons
Red Snapper and Lump Crab Ceviche with aqua de chile, avocado and Peruvian corn
Lamb “Corn Dogs”, pickled beets and spiced tomato (additional dog $2)
Mushroom and Gruyere Pierogi with brown butter and greens
Chicken Fried Oysters with squid ink pasta, pancetta, Swiss chard, mustard hollandaise (additional oyster $3)
Artisan Cheeses with Marcona almonds, walnut date cake and quince paste ($5 supplement)
Baby Romaine Lettuce with buttermilk fried ½ quail, tomato, jalapeno ranch dressing
Grapefruit Salad of hydro greens, lardons, avocado, blue cheese and walnut vinaigrette
Having a hard time choosing? Don’t stress about it. Choose an additional item from the Course One list for $10.
Course Two
St. Louis Pork Ribs with baked navy beans, braised winter greens, pickled sour apples and BBQ sauce
Szechuan Peppered Beef Tenderloin, parmesan home fries, baby arugula and pickled mushrooms
Sautéed Texas Gulf Prawns and saffron potatoes, Spanish chorizo parsley broth and grilled sourdough
Seared Duck Breast, sweet potato gnocchi, spinach and duck jus
White Bean Puree, Spanish rice, oven roasted beets, baby carrots, poblano cream sauce
Seared Red American Snapper, smoky beet mole, charred plantains, sesame and tomatillo sauce
Course Three
Salted Caramel and Peanut Molten Chocolate Cake
Apple Pie Bread Pudding
