Lilla Says Goodbye, Hello Elise!
Well, the humor in the Biga kitchen has been a little less dry and sarcastic lately in the absence of long time pastry chef Lilla Bernal. Lilla and her family have left the Alamo city for the sunny beaches of Belize after her husband, Juan Carlos, landed a chef position in a posh resort. She assures us that she will call San Antonio home again in the near future but, until then, she’ll make the best of living abroad. What a trooper!
Stepping in to help fill the void is Elise Broz. Trained in the North East at Johnson & Wales University, she honed her skills in London, Maryland, North Carolina and Chicago. Elise was most recently noticed when she was creating the desserts, locally, at Laurent’s Modern Cuisine in Olmos Park.
Elise will be working alongside Biga veteran Baker/Pastry Chef Amy Delbridge, creating the artisanal breads and desserts that even the most disciplined dieters will justify indulging.
Will McCory Moves On, Nick Moves Up
Also making an exit from the Biga culinary team is Will McCory. Stepping down from the Sous Chef position, Will has decided to take on a venture of his own. He is currently renovating a school bus into a food truck and will soon join San Antonio’s food fleet.
The Sous Chef position wasn’t vacant for long. As soon as Will announced his departure, Bruce and Martin already had someone in mind to fill the bill. Chef Nick Fuentes was already establishing himself as a leader while working in the Biga kitchen, so it was a no-brainer.
Nick came to Biga from the Dady restaurants. A San Antonio native, Nick is young, energetic and loves creating new, delicious dishes. His excitement for San Antonio’s food scene will prove very valuable as he trains our newest members of the kitchen staff.
Nick is also involved with the Texas Cooks Co-Op, a group of culinary professionals from many different restaurants that, in their spare time, share their culinary prowess with the public by throwing themed dinners in different spaces around the city.
